Cédric Bouchard, based in Celles-sur-Ource in the Aube region, has built a reputation for producing terroir-driven, single-vineyard Champagnes that stand apart from the blending tradition of the region. Since establishing his label in 2000, Bouchard has focused on crafting single-varietal, single-vintage wines that reflect the unique characteristics of each vineyard site. His commitment to organic farming and low yields ensures intense, concentrated fruit, and his minimalist approach in the cellar—such as using indigenous yeasts, avoiding malolactic fermentation, and minimal sulphite usage—allows the natural qualities of the grapes to come through. Notably, Bouchard bottles his Champagnes at a lower pressure (4-4.5 bars), creating a softer, gentler effervescence that enhances texture and brings out the wine’s mineral nuances. These Champagnes are refined and elegant, with delicate flavours of pear, citrus, and a touch of flint.
