    ABOUT THE WINE
    After completing studies at the Lycée Viticole, Olivier Jouan became the first in his family to produce wines commercially. Like many other, Olivier focuses on cutting the yields in the vineyard to ensure quality and true expression of the terroir. He also follows organic principles but with no intention to get certification with the authorities. He takes several measures to limit yields and intensify the concentration and Pinot expression of each individual terroir, including green harvesting in summer and a making a strict selection at picking time.
