González Byass Tio Pepe en Rama are the ultimate expression of a Fino sherry from specially selected casks bottled without filtration nor fining, the closest you can get to mimic tasting direct from cask at the winery. Antonio Flores, Master Blender at Gonzalez Byass selects the finest casks of Fino throughout the year which are then tasted for the final selection in April, when the presence of flor yeast in the wine is at its highest. These are produced in very limited quantities.
