The González Byass Tio Pepe Palmas Collection is a range of four wines that showcases the spectrum of Fino sherry as it evolves over time. Each year, González Byass selects just a few special barrels to represent the different stages of biological ageing.
The range features a youthful 6 year old Fino with a strong flor influence and more complexity than the standard Tío Pepe, called Una Palma; an 8 year old Fino, Dos Palmas with a fine flor character, nuttiness and vibrant salinity; a 10 year old Fino, Tres Palmas with a hint of flor influence and more nutty oxidative character; and a profoundly mature Cuatro Palmas, which has evolved into an Amontillado Muy Viejo aged for over 50 years with intense oxidative character with great complexity and elegance. The range tells a story of patience, place, and precision.
